three meat pumpernickel meatloaf with maple bacon onion jam glaze
This rich satisfying meatloaf combines the best of sweet and savory. The three meats, ground beef, ground turkey and Italian sausage create a great base for our addictive Jam. The pumpernickel breadcrumbs bring a surprisingly rich flavor layer. Enjoy this meatloaf with lush mash potatoes and a crispy slaw or create a big ole meatloaf sandwich!
We selected pumpernickel breadcrumbs to compliment the rich salty sweetness of the Jam. It works to balance the flavors and creates a rich satisfying combination.
• 6 slices of pumpernickel bread
• 1tsp black pepper
• 1 tsp salt
Cube 6 slices of pumpernickel bread
bake in oven at 300 till dry – about 10 minutes
Crush in Blender to make Breadcrumbs
add pepper and salt.
Note: To achieve more texture in your meatloaf, keep a few croutons on the large size. This will bring a bit more texture to the finished product.
Preheat oven to 350°
3/4 cup Maple Bacon Onion Jam
+ 1/2 cup Jam for glaze
8 oz ground round
8 oz ground turkey
8 oz ground sweet Italian Sausage
2 c pumpernickel breadcrumbs
Combine eggs and Jam, lightly beat together. Add chopped onions.
In separate bowl, combine meats.
Add egg mixture to meats, add breadcrumbs, gently combine till mixed.
Shape into a 5 by 12-inch loaf pan and bake for 25 minutes.
Remove from oven and use reserved jam to glaze top of loaf. Return to oven.
This step ensures the glaze does not burn.
Cook until 155° on meat thermometer. Approximately 45 minutes.
Remove from oven, let cool for 10 minutes before cutting. This waiting time allows all juices to settle.
Serve with an additional dollop of Jam.
Rosemary is a wonderful addition to this loaf, add 1/4 teaspoon to glaze if desired.
